It is Kord's will that Draegos have a 2 attack round. Therefore he will be dual-classing into a fighter at some point (probably 5th level).
So as not to leave us without healing, Holmar is planning on dual-classing into a cleric? Hopefully at roughly the same time...(13000+ xp)
Adair will dual-class from thief into magic-user at 5th level?
Any thoughts on dual-classing strategies?

Everyone should switch at the same time, so for a brief moment I will be the highest level character.

If Holmar waits until 7th level then he will get 2 attacks per round. Also he is still not certain that the priesthood is right for himself. The magical arts have a certain draw. I think we should stagger the switching between classes. It may make more sense in the story for us to all take a couple of months off to train for the new class but it makes more sense in terms of keeping the party strong if only one player is low level at any one time. It should make it quicker to bring the low level players back up as well. If we need more healing then I suggest we recruit an NPC priest (or get whoever joins the group to be one :)). Given that we averaged over 100,000 xp per year of gaming it doesn't make sense to me to switch too soon. Something else to consider is that switching at low levels will prevent us from gaining henchmen.

Something else to consider is that switching at low levels will prevent us from gaining henchmen. I'm fairly certain that you would lose any henchmen when you switch. A henchman would leave if his master ever became less powerful than he was. This is a good time to mention that I think people should start getting henchmen earlier than 8th level. Maybe at 6th level? Adair plans to continue as a Thief until he gets 10,001 XP and achieves 5th level. At that point he'll switch to Magic User. At 5th level he gets a triple damage back stab and will have accumulated a good number of thief skills. He'll become dual classed after earning 22K experience in Magic user, which is still pretty low.

Switching at higher levels will greatly delay the acquisition of henchmen. Worst case scenario would be advancing to 7th, then having to get all the way to 8th in your new class before you could get a henchman. A 7/8 dual-class character will take well over 100k XP. (except for, perhaps, the rare druid/thief)
In Draegos' case I'd want to dual-class early so I could regain the prior class abilities quicker and maximize the fighter's d10 HP/level.
Going by the XP charts, he could make 5/6, cleric/fighter while Baldrick and Holmar are still grinding out 6th level as fighters.
Slow and steady Twix would be around 4/4/5, fighter, magic-user, thief.
Adair would already be a 5/6, thief/magic-user.

He'll become dual classed after earning 22K experience in Magic user, which is still pretty low. Oh contraire- If I read it correctly: You'd need to make 6th level as a magic-user in order to use your 5th level thief abilities. So that'd be 40k experience in magic-user before you could be a mage/thief. At such time as the character has attained a level of experience in his or her new class which exceeds the character's former class level, the following benefits are gained: 1. A hit die appropriate to the new class is gained for each increase in level of experience, up to the maximum normal for the class in question (and thereafter hit points are likewise gained), and 2. The character may mix functions freely and still gain experience, although restrictions regarding armor, shield, and/or weapon apply with regard to operations particular to one or both classes. Example: A character with ability scores of 15 strength, 17 intelligence, 12 wisdom, 10 dexterity, 16 constitution, and 7 charisma is begun as a fighter. After attaining 6th level, the player switches the character to magic-user. This allows the character to retain six ten-sided hit dice, but in all other respects he or she must be a 1st level magic-user, wearing no armor, carrying those weapons usable by his or her new class, and using spells to combat opponents. When 7th level of experience is gained, however, the character gets a four-sided hit die for additional hit points he or she can sustain at the new level.
